There are a bunch of guides to how to do this on the internet, already, but they are all wrong. Mainly, they are wrong because Nokia removed a very key piece of software from their website. I have managed to track down a source of still finding that software so am going to post my own guide to how to use Localphone or VoIPCheap or whatever service it is that you would like to use on your Nokia E72.
The first thing you need is a piece of software known as SIP_VoIP_3_x_Settings_v2_0_en.sis, which used to be, but is no longer, available from the Nokia website. You can click on the file name to be taken to one of those annoying filehost download websites, of you can Google the file name, but either way, you cannot download the file from the Nokia website any longer.
Once you have downloaded the file on your computer, I highly recommend that you save it in the /Installs/ folder of your memory card so that should anything happen to your phone and you wish to replace it with another identical phone, you have this extremely valuable file ready to go.

Now, install the file by clicking on it.
After that, go to your menu and click on Control Panel,

then click on Net Settings,

and you will see a menu option that says “Advanced VoIP settings.” Click on that.

From there, go ahead and “Create new service,”

which means that you will have to okay the creation of a new SIP profile.

This means that you enter your VoIP/SIP username and password. Then make sure you don’t set up a presence profile, unless you know what that is. Which I do not.
After that, you will be taken to a screen where all that is left to do is to click on “Enable Service.”

If you entered your username and password correctly, your phone contacts should appear in the space that used to be blank. To access this screen again in the future - so as to disable service or whatnot - just go to your contacts list and press LEFT on the D-pad. You will be presented with a drop down list of options including all of your different SIP profiles.
If you go in to your SIP Settings, under Advanced VoIP Settings,

you can see all your different profiles and if they were ever successfully registered.

Easy peasy. I hope this helped the other Nokia E72 owners out there. I use LocalPhone via VoIP/SIP on my E72 in conjunction with Google Voice and IPKall - why so many services - to get around the fact that I have absolutely no cell reception in my apartment. I suppose this is a poor (wo)man’s UMA without actually having to give money to TMobile.
